In Little Rock, Arkansas, Mr. Keith’s Kettlecorn is a beloved local treasure, attracting popcorn lovers from all over the city. This business began in 2013, founded by Keith Fulks after 32 years with Southwest Airlines.
"I was introduced to a special popcorn mix from Chicago. I wasn’t interested at first, but once I tried it, I couldn't believe how good it was. I thought about how many people were like me and didn't know what they were missing."

This revelation sparked his interest in popcorn, leading him to research and develop his unique style and brand.
Fulks launched Mr. Keith’s Kettlecorn as a food truck in 2013. The venture quickly gained popularity, prompting him to open a brick-and-mortar location in 2016. The store offers a wide variety of flavors, drawing inspiration from major popcorn brands but with a unique twist.
“We have seven core flavors,” Fulks explains. “We start with butter, then sweet and salty caramel, caramel corn, the Little Rock mix, white cheddar, yellow cheddar, and caramel pecan.”
The transition from the aviation industry to gourmet popcorn might seem unconventional, but Fulks sees it as a natural progression. His background in aviation has given him a unique perspective on customer service and business operations.
“I spent years ensuring flights ran smoothly and passengers were satisfied,” Fulks said. “Now, I apply that same dedication to my popcorn business.”
The next big step for Mr. Keith’s Kettlecorn is to secure government contracts to sell in airports. Fulks is particularly excited about this opportunity, as his extensive experience with airports gives him an edge in understanding the environment and customer base.
“I know airports inside and out,” Fulks said. “Marketing my popcorn there is a tremendous opportunity I’m excited about.”
Navigating the complexities of securing government contracts can be challenging, so Fulks has engaged with the Entrepreneurship and Minority Business Development Agency (MBDA) Team at Communities Unlimited (CU) and Management Consultant Katy Parrish.
"I was running into a lot of friction trying to get my brand into airports. Katy and the team at CU have been tremendous. They've reached out to different people and organizations that can help me scale my business."
The process has been slow but steady. Fulks explains that he has received certification from the Arkansas Department of Transportation and has been actively attending outreach events at various airports.
“I’ve been to Atlanta, the Carolinas, San Antonio, Dallas — meeting people and making connections,” Fulks said. “It’s all about getting out there and staying persistent.”
CU and Parrish have played crucial roles in supporting Fulks through this journey.
“Katy has been available and proactive,” Fulks says. “She connected me with others within CU, who helped verify potential business leads. Their support has been tremendous so far.”
Mr. Keith’s Kettlecorn is a family-owned business, and Fulks envisions it growing to benefit future generations.
“This business is not just about me; it’s about creating something lasting for my kids and grandkids, as well as our community,” Fulks said.
As Fulks continues to push for contracts that will bring his gourmet popcorn to airports across the country, support from CU remains a vital part of his strategy.
“Having a company like CU speak on my behalf helps me crack the code of landing airport contracts,” he says.
With a solid business model, a passion for unique popcorn flavors, and support from CU, Mr. Keith’s Kettlecorn is set for even greater success. Whether you’re a local or just passing through Little Rock, a taste of Mr. Keith’s Kettlecorn is a delightful reminder that the best journeys often start with a single, unexpected bite.
“Mr. Keith is a cool guy to work with and I always enjoy our meetings,” Parrish said. “His kind and calming personality makes him easy to talk to and receptive to our message. Plus, his popcorn is phenomenal.”
